  • Alright Babish. I don't know if you'll see this but I'm gonna tell you the secret to slapping out a pizza crust like an actual pro. What you're doing is called "Gravity stretching" and it's a great way to end up with bubbly, uneven dough. First, You wanna make sure the doughball is round, then "dock" the sides by pressing your FLAT fingers against the edge. Try to leave it like 1mm in so you get a nice lip around the edge but that's pretty hard. Then flatten your hands, use your left on one side of the dough (NOT on the edge or too close to the middle) to hold the dough down while you stretch, then with your right hand pull the dough further and further apart until you have that 14inch round. Also for an easier time use corn meal, not flour. Experience - I slap out pizza dough all day errry day.

    • It literally says the name and capacity/model right on it in the video. (But it's a 14 cup Cuisinart. I believe the exact model number is DCPN-14 or something like that. I own it, and it's a very good food processor.)

  • Yep. Whole milk mozzarella is the secret... NEVER use part skim, it tastes like nothing. I learned the hard way. (I prefer Buffalo-style pizza to New York-style, FWIW)

  • The pizza is not New York by any means if you do wanna make a New York you need to stretch it properly with a dough that does stretch well an evenly and properly stretched dough done with the technique they use at pizzerias you can achieve a New York slice that stays up straight on its own and when its folded some diastatic malt can give you nice browning on the crust without a stone in a normal oven heated at 500F
