  • I've been making grilled cheese with cheese on the inside and outside for years. I use olive oil in my pan, butter the bread really well than place shredded cheddar on the bread, pressing it in so it mostly stays in place when quickly flipping it cheese side down into olive oil. I then begin circling it immediately around the pan till it starts to melt (This is helps you keep it from sticking to the pan, in conjunction with the oil). Then, I pile mozzarella on top of that bread and add another piece of buttered bread. While the cheese on bottom gets toasty brown, add more cheese to on top of that bread and flip it to repeat the cheese frying process. I like to use potato bread and it is the greatest grilled cheese on the planet. I always wondered if anyone else made a similar grilled cheese. Friends and family regarded me as a culinary genius for this sandwich, even though I am not actually into cooking, nor am I great at it. I was just a creative stoner. Pro tip: lightly toast the bread before frying the sandwich so it's a little toasty inside as well. Use at least 2 different cheeses. I know it seems like the frying of the outside cheese might be easier with sliced cheese, and that may be true, but I have always used shredded. Just takes a certain amount of finesse to keep it from falling apart or getting stuck.
