  • I do not know why I'm torturing myself. Having had radiotherapy to my mouth, my teeth are disintegrating, almost all the enamel is gone, just enough left to shred my mouth on the inside. What's left is like trying to chew with painful pencil erasures. Btw, don't be like me, if someone wants to smoke in your house, leave or kick them the hell out. Too bad I let my step kid live here for so long, I got to pay for her sins. Friggin' cancer. I can smell all of these in my minds nose though. In a few more months, I'll be going to town on some, like that imperial bacon, I haven't had it in quite some time so it'll be wonderful when I can get to chewing again. Great reviews, so very well done. The man knows his pig products, that's for sure. I would even settle for some turkey bacon, but that'll have to wait as there are options that will so screw that, I need to regain about 40 to 50 pounds and I just can't wait. Thank you for another job exceedingly well done! It might be tortuous, but it gives me goals to aim for, if I have to pay $25 a pound for something so good, so be it!

  • Im canadian and ive never heard of canadian bacon. Our bacon is like the first bacon you showed. The canadian bacin is just ham that we eat with maybe at brunch with maple syrup. Because that ham is very salty.

  • The funny thing is most people shopping at a fresh meat store would always go for the processed option. They look more uniform and it's more so what they're used to purchasing in their pre-packaged processed versions. Selling high quality meats is simply not easy, people don't want it. lol

  • one correction, Speck is not northern italian, but more of a central/southern Austrian and also Czech cured Bacon, the only part of Italy you find this in is in the italian Province of southern Tyrol which used to be part of Austria.

    • Well, half of northern Italy used to be under Austrian rule. Many dishes from other parts of the empire are traditional in Italy too, for examples: Milano schnitzel, friulan goulash or the speck. Mittel Europe cuisine acquired the Italian technique for salami during the same time frame.

  • You overcooked the English bacon... it’s better when the fat is soft but the edges are slightly crispy, then you cook it without getting rid of excess fat so it’s not dry.
